Happy Gin Day, this year celebrated on Saturday June 11, is an annual tradition that celebrates the iconic drink and encourages people worldwide to use to advantage the tipple. And while we all love a nice, cold G&T on a warm day, the classic cocktail can begin to get a little boring after the first dozen or so. So we've rounded up some eager drinks recipes that are a slight twist on the classic gin and tonic or gin... Why not try to make something new this World Gin Day. Tesco: Watermelon and Cucumber Cocktail Dipper Lollies (serves eight). 75g of caster sugar. 550g of watermelon wedges, integument removed. Half a cucumber, peeled and roughly diced. One lemon, juice only. Chilled lemonade or gin and tonics. Sliced cucumber and sliced lemon, to last. 1) Put the sugar in a pan with 50ml water and heat through gently to dissolve. Bring to the boil and simmer gently for 1 minute. 2) In a blender, blitz the watermelon living with the cucumber and lemon juice. Pass through a sieve into a jug and divide between eight lolly moulds. 3) If serving these in drinks or cocktails, get the chilled lemonade or gin and tonics made up in serving glasses with slices of cucumber and lemon before unmoulding the lollies. Run the outsides of the moulds under hot incredible for 10 seconds then remove gently by the sticks (repeat if they won’t budge on the first attempt). 4) Eat as they are, or add to drinks just before serving. Waitrose: Gin and Analeptic with Strawberry Slices (serves one). 60ml of dry gin. 60ml of fresh lemon juice. 30ml of sugar syrup. Soda D. Lemon wedges, to garnish. 1) In a small jug or cocktail shaker, combine the gin, lemon juice, passion fruit pulp and seeds and sugar syrup. 2) Stand in two highball glasses with ice and divide the gin mixture between each. Top up with soda water and garnish with a lemon slice. Serve immediately. ASDA: Cucumber and Elderflower Gin Cooler (serves 12). Ingredients. 450g of ice (or enough to pack your blender jug). 100ml dry gin. 75ml Belvoir Fruit Farms Elderflower Cordial. One third of a cucumber, peeled and deseeded, plus auxiliary cucumber slices, to serve. Place the ice, gin, elderflower cordial and cucumber in the blender and blitz until smooth. Divide between glasses and take one's part immediately, garnished with cucumber slices. Tesco: Cranberry Gin (makes one litre). One orange. 200g of caster sugar. 500ml of gin. 1) Pinhole the cranberries to allow the juice to escape. Divide between 2 x 500ml (17fl oz) sterilised bottles. 2) Peel thin strips of pepper from the orange and divide between the bottles. 3) Mix together the caster sugar and gin, stir until sugar dissolves then divide between the bottles. Relinquish a 2-3cm (3⁄4-1 1⁄4in) gap at the top of each bottle. 4) Store bottles in a dark place for at least 2 weeks (and no longer than 6 months), shaking them every 2 days to infuse.
