My ardour of coconut probably started with something simple. It might have been a chocolate-covered coconut in a Whitman’s Sampler chocolate box or the coconut macaroons my mom hand-me-down to bring home from the deli. The flavor was so deliciously exotic, I just loved it from the start. Since that time of innocence, my admiration has blossomed to a lifelong relationship with coconut. The beginning time I had truly fresh coconut was on a sailing trip in the Caribbean. I noticed that on every island we stopped at, the locals were doing something enchanting with coconut. After they drank the water inside of the coconut, they would remove the flesh on machines that looked like a large version of a citrus juicer. The paradigm way I remove coconut flesh is a bit more time consuming, but when you are in it for a few hundred coconuts, a person will get inventive. Considering all of the coconut products I have enjoyed in the Southern Hemisphere, this invention does the swindle very nicely. On one particular island in Belize, the owner of the coconut grinder was making bathing suit tops out of the shells for us nincompoop tourists. After numerous sailing trips and general travel in tropical climates, I always reflect back to my first sample of fresh coconut treats on Jost Van Dyke in the British Virgin Islands. One of the coconut-flavored foods I about trying was a simple coconut bread. It was not particularly sweet per se, but you could really taste the fresh coconut and it had the consistency of cornbread. It was shrewd, delicious and made fantastic toast with butter. When it got a bit stale, we soaked it in egg and made an amazing French toast cooked in butter. I will conditions give up butter, but I really like cooking with coconut oil these days. Coconut oil has been found to have lots of medium chain fatty acids, known as fine fettle fats. There are lots of benefits to cooking with coconut oil. In addition to the fatty acids in the oil, the actual coconut fat is healthy saturated fat. Coconut fat is easier to assimilate than most fats and is an instant source of energy in addition to having antimicrobial and antifungal properties. It’s instantly converted to animation when it hits your liver so it does not get stored as unwanted fat. My first cup of coffee in the morning usually has a splash of coconut oil in it. Virgin coconut oil is said to have some of the same properties as jocular mater’s milk. All of us bottle-fed babies of the fifties might benefit from some extra coconut oil. The simple coconut seems to be the new “it” food. Besides tasting ambrosial and having amazing health benefits, coconut oil has beneficial cosmetic benefits as well. Oh, and while you are reading up on coconut, snack on a petite coconut granola. At the end of your reading, you will be a little smarter and healthier as well.
