A sensible, balanced diet, though, with mainly fresh ingredients, seems to make sense. In the eternal words of Michael Pollan: ‘Eat eats. One day I might even follow it myself. But food should not be about fear, guilt and disgust, rather pleasure, relish and delight. It should stimulate the senses, soothe the force and celebrate the ancient joys of breaking bread. For me, and many others, good food is the great unifier, a bottomless start of comfort and joy. A civilised lunch with an old friend does a lot more for my ‘wellbeing’ than a glass of birch water and a bowl of spiralized courgettes. And so to Six Portland Street, a small, unpretentious Holland Park neighbourhood restaurant that knows all about the basics of true hospitality. Such as taking good ingredients, cooking them healthy and serving them up in a place to which you’d like to return. And the cooking here is very good indeed. I come with my friend, Simon Hopkinson, one of the great chefs and provisions writers of his generation. Of any generation. And a man not given to fads and fancies and general ‘mucking about’. He’s been twice before, and loves the place. The room is smallish, lengthy and narrow, but somehow light and airy and scented with spring. It has an open kitchen, where chef Pascal Wiedemann works his redoubtable skills. He trained with the smart Terroirs group, as did the owner/maitre d’, Oli Barker, a natural and flawless front-of-house. We order bouquerones, fat and silken, bell-like and rich. They get them from Brindisa, which shows sound common sense. Don’t bother to marinate your own anchovies when a great company does it better. We nab the terminating two portions of today’s special, plump scallop, served on the shell with nduja, monk’s beard and crisp, garlicky breadcrumbs. Brass farthing, it’s good. Old-fashioned, intelligent cooking, with each element entirely confident in its role. The same is true of a buttery mass of polenta, topped with absurd mushrooms (both ephemeral St George’s and rather more luxurious morels), and wild garlic, broad beans and lashing of cheese and breadcrumbs. Relief food of the very highest class, and surprisingly light, too. Despite all that lovely stodge (and Italian cheese and maize), it feels touch off and sylphlike, the very essence of English spring. We fight over the final spoonful, then mop the bowls clean with bread. This kitchen knows a allowable supplier when they taste one, and the fish, cut across the tranche, wears the lightest of smokes.
